For Easter this year, we went out to Mt. Vernon. Westin had a lot of fun this year hunting eggs in the backyard and at Easter in the Park at Little Creek Park on Saturday. We had fun dining outside on Saturday night, and playing one of our family's favorite games, Spinner.  On Sunday, we went to the late service at church and then enjoyed our usual Easter lunch of ham. Mom made an upside down apple pie that was fabulous! Here are a few pics from the weekend.

Valentine's Day

For Valentine's Day, Matt and I usually are a little off schedule because Matt is usually in Houston for the Southwest Preparatory Conference winter sports tournament. They have it the same weekend every year, and this year it actually ended up great because I was scheduled to work as well. We celebrated a little on Wednesday night by having steaks at home, and I made PW's sticky cherry pudding cake for dessert.We loved it!  Definitely going to be making this one again.

I made Rice Krispy Treats and dipped them in chocolate for Westin's teachers at school and we delivered them on Wednesday.  We also had dinner with my Neal, Emily and Kristen on Tuesday night and gave them these as well.

Westin and I drove out to MV on Thursday afternoon so mom and dad could watch Westin while Matt and I were working for the weekend. We flipped his carseat for the first time, and he was sooo happy. I had fun watching his sweet face every now and then when he was sleeping on the drive out.
We made some Valentine's for my mom and dad with Westin's handprint.
And Westin came home with this adorable "Owl Always Love You" from school on Wednesday. 

My mom made her classic heart-shaped pink pancakes on Valentine's morning. Westin and I were both in pancake heaven.
My sweet hubby also left Nothing Bundt Cakes and an orchid for me to get when I got to work on Friday afternoon. Happy Valentine's Day everyone!

PW Holiday Baking

My mom and I have decided that we are each going to make one of Pioneer Woman's recipes from her new holiday cookbook for each holiday. From her New Year's section, I decided to go with the baked French toast recipe. I have eaten other ones before, but I have never made one myself. Matt and I love regular French toast, which we make fairly often, so I figured this recipe would be a huge hit.

It was super easy to make, and I always love recipes that have you complete the assembly the night before so you can pop in the oven the next morning. I went ahead and added some pecans to the topping because I had some on hand. 
The verdict:
I really liked it, but I feel like it is more like a bread pudding than "French toast". I did eat one piece at night as dessert.
Matt was not convinced... I think he was expecting a more traditional "French toast". 
I think it is a great option if you need to take breakfast/brunch somewhere for a crowd. At home, we will probably stick with regular French toast!

Ice at the Gaylord

On the weekend after Thanksgiving, we went with Emily, Nsal and Kristen to the Gaylord Texan in Grapevine to tour ICE. Matt, Emily and I had been a few years back and we thought Westin would enjoy it. 

I was so proud of him for making it down the big slide by himself! For some reason, they wouldn't let the parents go down the slide with them, even though it was just a few feet shorter than the other slides.

After having fun at ICE, we went to downtown Grapevine for dinner. It was a fun outing! I think we will wait a few years to go again when Westin can really appreciate it.

Dallas Zoo

Today was a perfect day to visit the Dallas Zoo! The weather was great, and we were able to see lots of animals. Aunt Emily was even able to go with us. Westin's favorite part was probably the petting zoo. He loved the goats and kept thinking they were dogs... He would say "Abby!" "Woof woof!" 

He also liked getting up close and personal with this friendly giraffe.
